Why Purslane?

Have you ever used purslane in a recipe? To make a delectable purslane dish with a Turkish flair, you’ll need:

Two cups of tender stems and fresh purslane leaves
One large onion, diced finely
Two minced garlic cloves
Two medium tomatoes, chopped
One tablespoon of olive oil
A single paprika teaspoon
To taste, add salt and pepper.
Lemon juice (not required)

To get the purslane ready, begin by giving it a good rinse to get rid of any dirt or grit. Keep the tender leaves and stems and trim any tough ones.

Sauté the Garlic and Onion: Heat the olive oil in a big skillet over medium heat. Add the minced garlic and diced onion, and cook until aromatic and soft.

Add the Tomatoes: Cook the diced tomatoes for 5 to 7 minutes, or until they begin to break down and produce a sauce.

To cook the purslane, put it in the skillet and thoroughly combine it with the tomato mixture. Add the salt, pepper, and paprika. Cook until the purslane is soft but still has a hint of crunch, about 5 minutes.

Finish with Lemon Juice: Just before serving, pour some lemon juice over the meal for an additional flavor boost.
